LCHF Breakfast Casserole
I've been avoiding sugar like a heroine addict. Yeah, I am a sugar junkie. I don't want to be, though. About a year ago, I gave up sugar for about a month. Oh, my goodness! Was there a change!
I felt better. I slept better. Low carb was not only helping me feel and sleep better but I was losing weight without exercising. Just avoiding sugar like the plague helped me lose fat.
But....
I wanted sugar. I wanted it bad. Ironically, by Independence Day, I was carb free during the week and off the low carb wagon and eating some sort of carbohydrate all weekend long. That eventually evolved into weekly carbs.
I went from losing fat to gaining again.
Arggggg!
Here it is March 2015 and I am afraid to step on the scale for fear of the truth...that I am gaining again. I confess that I am a weak, weak, weak woman. Though I am a role model for my children and their friends, I am a complete failure.
But....
God is good. God is always good. He is such a gentleman. He is merciful. He is gracious. And He loves me. He created healthy living. He created righteousness. I can live up to His standards which are not a burden. His yoke is easy.
Today is the the day the Lord has made and I will rejoice and be glad in it.
Tomorrow is Friday. A new day. A day to start over. And I will start over by bringing a very low carb breakfast casserole to our weekly meeting at work. I want to share the recipe with you. Let me know what you think.
LCHF Breakfast Casserole
1 lb Turkey sausage
1 lb Canned chicken
18 eggs
1 C Parmesan cheese
1 C Sharp cheddar cheese
1/2 C Greek yogurt
1/2 C Cream
2-3 C Fresh spinach
Cook turkey and mix with chicken. Mix all ingredients and bake @ 350 degrees for 60 minutes. Enjoy.
