Salisbury Steak Dinner


2 lbs cube steaks
beef stock/boullioun
2 lbs mushrooms (button, portabella, shitake...whatever you like, just make sure they're fresh)
1 large yellow onion, optional
water or milk
Salt & Pepper to taste (I think a little more pepper in gravy is a must)

3 T Flour

2 lbs hot, buttery mashed potatoes
Buttery corn nibblets

Preheat oven to 350 degrees
Sear cube steaks and place in a 9x13 glass baking dish (do not flour them)
Fill baking dish with beef stock/boullioun to cover cube steaks
Bake in oven for upto 2 hours or until steaks are tender and liquid is reduced but not gone
While cube steaks are baking, saute mushrooms (and onion if you chose to have it with your salisbury steak) and set aside
When cube steaks are finished, temporarily plate them, loosly covered with tin foil
Measure stock and add water or milk to bring amount of liquid to 2 cups and pour into sauce pan and bring to a boil.
Stir about 2 T water into 3 T flour to make a cold rue and pour rue into boiling stock. Bring back to a boil for 1 minute and remove from heat.

Serve salisbury steak smothered, next to a mound of mashed potatoes, covered in gravy, of course, and a pile of buttery corn. Enjoy. <3
